Caprese Salad

Tomato's are coming in to season and this quick easy recipe gives a freshness to your summer meals. The blended flavour of the juicy tangy taste of heirloom tomato's, the delicate taste of mozzarella and the sweetness of the aromatic basil gives you a light meal or salad for those hot summer days. A caprese salad's gorgeous colour, the whiff of fresh basil and olive oil really gets the taste buds going.

Serves 4


3-4 medium heirloom tomatoes, sliced

1 Ball of fresh mozzarella, sliced

Fresh basil leaves

Extra virgin olive oil

Himalayan salt & ground pepper


  • Arrange tomatoes, mozzarella and basil leaves on a platter.

  • Drizzle with olive oil and sprinkle with Himalayan salt and pepper.

Note, sometimes I drizzle with balsamic vinegar and add sliced avocado.
