Peanut butter cookies

Looking for some easy holiday baking to do with the kids! This is a great low carb and low sugar treat!


Ingredients


1 Cup of peanut butter (either smooth or crunchy)

1 Egg

1/3 C Keto sweetener

1/2 tsp Baking powder

1/2tsp Vanilla essence




Method

  1. Preheat oven to 180 degrees Celsius and prepare baking tray by lining with baking paper.

  2. In a mixing bowl, add all ingredients and mix until smooth and glossy.

  3. Roll a heaped dessert spoon of dough into a ball and place on the tray. Repeat until all the dough is used.

  4. Flatten the balls with a fork or press with your finger tips.

  5. Back cookies for 12-15 mins

  6. Remove from the oven and allow to completely cool before eating.

Tips and Tricks

You can substitute Keto sweetener with coconut sugar.

When rolling the dough wet hand with cold water.

Get creative and add chocolate chips, cranberries or raisins.
